The three cultivars were vinified and aged separately in small French oak barrels for 28 months, personally selected by the winemaker and then blended together.

Grapes were destemmed and put straight to press. Light pressing of up to 0.2 bar, for slight colour extraction. Clean settling, with an NTU reading below 20. Cool fermentation was conducted using Delta yeast, thereafter the wine was filtered and bottled.
